Coriander, cumin, fenugreek and curry leaf are roasted and ground in the kitchen in small batches through the week. It is the slow way to do it, and it is the reason a Chettinad and a Madras do not taste like the same sauce with different chilli.

Cooked to the order, not to the pass

Nothing sits under a light waiting for a table to sit down. The tandoor is lit at five and the first breads come out when the first order does — which is also why a collection is worth the five-minute walk from the car.

What we changed, and why.

  • The menu became software. Searchable, filterable by diet and heat, photographed — instead of a document you pinch-zoom on a phone.
  • Ordering finishes here. The collection discount and the delivery minimum do their work inside the totals, where they change what someone puts in the basket.
  • Booking is four taps. No account, no third-party widget, no email round trip.
  • One page, one job. Everything above is built to end in a table booked or an order placed.
